Another awesome sugar-free muffin

Adapted from this recipe
Wet:
1 banana , mashed (can substitute 1/2 c. unsweetened applesauce) -- I used 2
3 eggs , lightly beaten (or egg whites equal to 3 eggs) -- I used 2
1 cup soy milk
1/4 teaspoon vanilla extract

Dry:
1 cup old-fashioned oatmeal
1 cup oat bran
I used 1/3 cup oat bran, 1/3 cup chickpea flour, 1/3 cup of mixed almond meal+millet (really like the texture millet brings)
2 tablespoons ground flax seeds
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon

Mix-ins:
3/4 cup chopped walnuts
3/4 cup dried cranberries (or blueberries, or use fresh or frozen) - I used frozen blueberries and some unsweetened dried coconut

Casey likes his with almond butter. Next time, I'll try putting almond butter in the middle of the batter. These are so good and good for you too!! We finished 16 muffins in 2 days!! Make them TODAY!
